Oven Roasted BBQ Chicken Wings

Recipe for Barbecue Sauce – from FreshPreserving

20 cups chopped cored peeled tomatoes (about 21 medium)
2 cups finely chopped onions (about 3 to 4 medium)
3 cloves garlic, finely chopped
1 Tbsp hot pepper flakes
1 Tbsp celery seeds
1-1/2 cups lightly packed brown sugar
1 cup white vinegar
1/3 cup lemon juice
2 Tbsp salt
1-1/2 Tbsp ground mace or nutmeg
1 Tbsp dry mustard
1 tsp ground ginger
1 tsp ground cinnamon
3 (16 oz) pint glass preserving jars with lids and bands

Sweet Potato Shoestring Fries with Garlic and Rosemary

I’m a fan of vegetable fries, crisps or chips. In fact these zucchini shoestring fries are right up there amongst my favourite food. Not at all healthy, but superb for a special treat. The rosemary sizzles in the oil as they fry and the garlic imparts a subtle flavour. You could eat the garlic crisps but I found them a little too bitter.

There is no recipe here because this is just sweet potatoes cut into the thinnest julienne and fried with rosemary and garlic. I used a mandolin to cut ribbons and then sliced these to make the chips.

Crunchy Summer Salad with a Balsamic and Honey Vinaigrette

Salad ingredients: red and green cabbage, red onion, radish, carrots, pumpkin seeds, baby spinach or baby kale leaves

Dressing recipe – enough for one medium salad bowl

1/4 cup olive oil
2Tbs balsamic vinegar
1/2 tsp Dihon mustard
1T honey
sea salt flakes and back pepper
